| During the move and re-licensing, we took the opportunity to develop an addition to the family of pot stills we use (all hand made in-house, of course!)...Introducing #003.
She's a 1200 gallon stainless pot still - and rumor has it that might just be the largest one West of the Colorado Rocky Mountains!
#003 is direct fired with LNG, and features a copper dephlagemator plumbed into the lyne arm for an articulate abillity to regulate the distillation. Over 150 feet of copper coils are housed in the condensor, createing a smooth flow of distillate. #003 is used for the first distillation of larger batches; the second distillation, or spirit run, is completed in the copper alembic, #002.
The result is an amazingly smooth, slowly distilled product we believe is unsurpassed!
